The Osteria Palazzo Ducale in Castilenti offers to its guests an accurate selection of dishes and tastes, some of which are strongly related to the territory and the quality of the ingredients.

The most iconic and representative dishes of the Osteria are, without a doubt, the “chitarra alla teramana”, the “pasta alla mugnaia”, our local lamb and the “pizza dogge”. A short but intense taste itinerary among the local flavours of this part of the Abruzzo region.

ANTIPASTO DUCALE

Sharing board with cured meats, cheeses, and warm starters. A long and flavoursome “overture” that prepares your tastebuds to a pleasant taste itinerary of the territory of Abruzzo and the province of Teramo. The cured meats and cheeses are locally produced and have a natural flavour, while the warm starters are an invitation to experience typical products.

CHITARRA ALLA TERAMANA

The “chitarra” is a square type of spaghetti that is obtained by using a beechwood pasta cutter with metal cords that makes it look like a musical instrument.

The “pasta alla chitarra” is a homemade pasta with a porous consistency that is perfect for absorbing the tomato sauce from the meatballs ( “alla teramana”) and needs to be cooked al “dente”.

It is the traditional Sunday meal, of the celebrations, and the most appreciated and well-known dish from Abruzzo.

GNOCCHI TOBIA

It is not a traditional dish but is one of the most appreciated dish especially loved by anyone who enjoys the taste of wild asparagus, local sausages and fragrant and intense truffle. The gnocchi are made by hand every single day and are soft and easy to digest thanks to the quality of the flours used.

Mixed meats roast

Sausages, pork chops and pancetta. It is the typical second course of Abruzzo, especially in the mountainous areas of the region where livestock and sheep farming are historically the main economic activities.

PIZZA DOGGE

Is the Queen of parties and someone even reference to her as “love story”. The pizza dogge is a rich, tasty, delicate cake that was traditionally made for weddings, birthdays, holidays, and other occasions (a tradition that is still present to this day).

There are different versions of this cake, based on the area and the tradition, but the base of this cake is common to all the versions: sponge cake layers soaked with alcohol with chocolate and custard cream filling.
